What is Gnocchi?

Gnocchi (singular form gnocco) are pillow-y, soft dough dumpling traditionally made from semolina, wheat flour, or potato. The pasta is rolled out, cut into small, wine cork-size pieces, and then pressed with a fork or cheese grater to form ridges to hold sauce.

Gnocchi are usually eaten as a replacement for soup or pasta as a first course in a traditional Italian dinner, and have been around since Roman times.
